Ingredients

  • 4 salmon fillets
  • 1 jar Bay’s Kitchen Sweet & Sour Stir-In
    Sauce  
  • 1 tbsp maple syrup (optional for extra
    thickness)
  • 1 tbsp sesame oil
  • Low FODMAP greens (pak choi, spinach, green
    beans)
  • 250g jasmine rice
  • 1 tbsp sesame seeds    
    Spring onion tops (green only)
    Lime wedges.

Method

  1. Start by making the glaze. Stir together the Bay's Kitchen Sweet & Sour Stir in Sauce and maple syrup until smooth and glossy.
  2. Place the salmon in a baking dish and coat well in the glaze. Bake at 180°C for 12–14 minutes, spooning the glaze over the salmon halfway through cooking, until the salmon is just cooked through and tender.
  3. While the salmon cooks, prepare the sesame rice. Once the rice is cooked, stir through sesame oil and sesame seeds.
  4. Stir-fry greens quickly until vibrant (use garlic-infused
    oil if desired).
  5. To serve, place the salmon over the sesame rice, drizzle with the warmed glaze from the baking dish, and finish with the greens, sliced spring onion tops, and a squeeze of lime.
