Ultimate Low FODMAP Veggie Gravy

Ingredients
- ½ Jar of Bay’s Kitchen Concentrated Vegetable Stock, made up with 1 litre hot water
- 4 Carrots, roughly chopped
- 2 Leeks, green tops only, roughly chopped
- 150g Oyster mushrooms
- 1 Glass white wine
- ½ Large bulb of fennel, trimmed and roughly chopped
- 2 Tbsp Olive oil
- 2 Tbsp Gluten free plain flour blend
- 2 Tbsp Tamari
- 1 Tbsp Miso paste (check gluten free)
- 2 Bay leaves
- A few large sprigs of thyme/rosemary/any other woody herbs
Method
- Preheat your oven to 210C/190C fan. Add the fennel, carrots and oyster mushrooms to a large roasting tray, drizzle with olive oil and season lightly with salt.
- Place in the oven to roast for 25-30 minutes, or until golden and caramelised at the edges.
- Tip the veg into a large saucepan on the hob and add the green leek tops. Pour the wine into the hot tray and place the tray back in the oven for 5 minutes, or until the wine is bubbling and it has started to deglaze the pan. Scrape up any caramelised bits stuck to the bottom - that’s where all the flavour is - and pour the contents of the tray over the vegetables.
- Place the saucepan onto a medium heat and add the flour. Cook for a minute, stirring to coat the vegetables, then add the miso paste. Let the miso paste cook on the bottom of the pan before adding in the bay leaves and any woody herbs you’re using. Pour over the hot stock, add the tamari and bring to a gentle boil.
- Turn the heat down to a simmer and let the gravy cook for 20 minutes, or until it’s as thick a consistency as you like (remember it will continue to thicken when you reheat).
- Pour the gravy through a sieve into a fresh saucepan or bowl, using the back of a spoon to squeeze out as much flavour from the veg as you can. Taste and season to your liking, before cooling to room temperature and storing in containers or bags in the fridge or freezer.
This recipe freezes well, so you can get ahead, knowing that you have a flavour packed, gluten free and low FODMAP gravy on hand for whenever you need it.

New to the low FODMAP diet, I was delighted to discover this range. It’s been astonishingly difficult to find low FODMAP- approved foods. So far, I’ve only tried the Pesto but as this is delicious, I anticipate the two other products I bought (chicken stock and BBQ sauce) will be equally as good. Now that I’m having to read food labels, I cannot believe we’re subject to the nonsense that’s added to the majority of products. Long may Bay’s Kitchen last, as I will certainly be staying a customer.
Really help plain fish and meat and vegetables taste nice again by being able to add a sauce.
This is a really tasty sauce. Great with chicken or prawns and rice for a quick mid week meal.

BBQ sauce is often only used for bbq meals or ribs. But this is great to give a meal an uplift. Added a small amount to bolognese sauce portion and it was great. Really gave the meal an up lift that I have been missing for so long due to multiple food intolerance. Definately recommend
