Thai Green Fish Curry Parcels

Method

  1. Preheat the oven to 200°C, 180°C fan and cut two large squares of foil and two large squares of baking parchment. Scrunch and unscrunch the baking parchment and place one on top of each piece of foil.

  2. Divide the chopped cabbage between the parchment paper and place a fish fillet on top. Toss the broccoli on top of the fish and then pour over the Thai Green Curry Sauce, dividing the jar between the two portions. Finish with a few slices of lime and then fold up each parcel tightly.

  3. Place the parcels onto a baking tray and bake for 20 minutes, or until the fish and vegetables are cooked through.

  4. Meanwhile, cook the rice according to packet instructions and fluff with a fork.

  5. Open up each parcel, scatter with coriander and serve with the rice and extra lime slices.
